There are a couple of ways:

1. If you want to remove an entire album, then go back into iTunes, select Edit->Preferences->iPod->Photos, and simply deselect the albums that you don't want on your iPod anymore. They will be removed during your next sync.

2. If you simply want to remove a few photos from an existing album, you'll need to take them out of the directory that iPod is currently using to represent that album (ie, the sub-folder under "My Pictures" in a default configuration). If you're using Photoshop Album or Elements, remove them from the applicable collection. Again, they will be removed during your next sync.

Be sure and check out my iPod 101 guide for more info (see my sig for the link).

If you're in automatic synchronization, your iPod will disconnect when it's done synchronizing, unless you have "disk mode" enabled, which would result in it showing up as "not connected".

Try holding down SHIFT-CTRL (or CMD-CTRL on the Mac, I believe) while connecting the iPod to force it to skip the auto-sync and stay connected (note that you will have to hold it down until the iPod shows up in the iTunes sounce window on the left).
