Just in case anyone else has the same problem!
I bought 20gb ipod last month and had a fun time getting it to work on my XP Pro machine. It would not mount properly (kept disconnecting) and every time I insert a CD to import the computer would restart. After a couple of calls to Apple and a few late nights I figured out what was causing it. I went through the startup program list in msconfig a few items at a time and narrowed it down to a file called tfswctrl.exe that was starting with windows. Since I disabled it, my ipod has been perfect.

Just for everybody's information, here's some more info on this file...
Process File: tfswctrl or tfswctrl.exe
Process Name: DLA Packet Writing Software
Description: Application that is used to write data to CDs directly from Windows applications, without using the actual CD Writing software.
Company: Hewlett-Packard
System Process: No
tfswctrl.exe is a module of the IBM DLA (Drive Letter Access) delivered with Hewlett Packard CD writers. Uninstalling IBM's DLA software or simply preventing this executable from starting up will not affect your computer's ability to burn CD's, so if it's affecting your ability import CD's into iTunes or connect your iPod... nuke it!!
EDIT: Fixed dumb spelling mistake.
