A minijack-RCA adapter.

Then you have the choice of either buying a fancy dock or connecting directly to the iPod.

I used to use an RCA cable with a minijack adapter. It worked out fine if I kept the iPod volume up full. Then I got really hooked on the Party Shuffle feature in iTunes and its ability to put albums or songs into the shuffle and arrange the order dynamically, so I got an airport express. It's certainly not the cheapest option (but I felt it was reasonable). I enjoy controlling the tunes on my home stereo from my computer much more than controlling from the iPod.

i've currently got my iPod in an iPod dock connected to my valve amp using a stereo phono to 3.5 mm minijack plug

it works well if you keep the ipod cranked up an then use the stereo volume control

but if you have an amp without a volume control you can use the iPod to control the volume
Apple remote works well with this (unless you got a front row enabled Mac switched on in the vicinity of the iPod dock)
:)
