In a thread in the general section there is a story about someone who lost their ipod during a kayacking trip. He used a waterproof bag. Not a specific case but it was a bag that had one.

Later he explained what the bag was called and where to get it. I think the thread was called "I lost my ipod today" Hope it helps.

They also talk about some waterproof bag that has a waterproof headphone jack.

The Pelican Micro case 1010 will fit the iPod, you might have to add some foam inserts to make sure the iPod doesn't shake around.
http://www.pelican.com/cases/4bo_1010.html

iPod dimensions: 4.1" x 2.4" x 0.73"
Pelicam 1010 dimensions: 4-7/16" x 2-15/16" x 1-11/16"

Also have a look at the Otter range of cases

I also 'constructed' a waterproof case very easily before going to the Atlantic ocean for holidays this summer: I just took a box (ment for sandwiches), sealed it up with silicone, put foam material into it (the mid layer I had actually cut to fit the ipod), and then I drilled a hole into it and sticked in a 3,5mm socket, onto which I had soldered an old cut-off 4 inch headphone-cable... well, it was perfectly water- and sandproof (well, I actually didn't carry it into the sea, but nevertheless... =) ). Only bad thing was that I had to open it everytime when I wanted to start or stop playing or change the song...
would have been cool to be able to get a remote-socket to glue in... but well, it worked like that, too...
