How do I add a directory as a playlist?
All my mp3s are stored in directories, with the directory being the name of the album. So I have dirs like Anthrax - Sound Of White Noise . Anyhow, what I want to do is simply add these directories to my iPod as just directories, OR, add the mp3s in whichever way but have the software auto create playlists for each directory so they appear as directories inside the iPod. How can I do this? Using either music match or ephpod they automatically try to read the ID tag of the mp3s and assign them to playlists that way.

You have to understand that the iPod has no concept of directories. It does everything by id3 tag. As such, no matter what you do it's going to get the information by the tags that are on the songs.
Now, if you have your songs properly tagged, it will automatically organize them for you. So, if you have your songs in Artist directories and all the files in that folder have the proper artist tag, it will display them under that artist name when you Browse>Artist.
If you add the Album tags, it'll do that as well. You won't need any playlists if you do this.
Best bet is to tag your songs properly and you'll be in good shape. If you want to stick w/ephpod you can use a good tagging program (I like id3-tagit from www.id3-tagit.de, it's free). If you want to go an all-in-one approach, you can try MC9, it's helps you manage your tunes and uploads to the iPod.
Xplay is also a good option, it uses a drag and drop interface that you might find suits your "directory" structure.
